As a varietal, Riesling, with its great acidity, is one of the rare grapes that can make fabulous sweet wines as well as dazzling dry wines by stopping fermentation; either by adding sulphur dioxide, by centrifuging, or by chilling the wine. In Alsace, Riesling prefers hilly, sheltered spots but in other regions grows best in sandy clay and loam. This is one varietal that can really reflect its terroir! Alsatian Rieslings are full-flavored, a little higher in alcohol than some, and usually spend more time in old barrels, giving the wines more roundness.

The Meyer Riesling is very food-friendly and excellent with spicy chicken and Thai dishes.
